Cilantro Lime Guacamole Recipe

This simple Cilantro-Lime Guacamole is great for snacking. Super healthy with carrot sticks, on toast with a slice of tomato, on tacos, and of course as a dip for corn tortilla chips. MY FAVORITE SNACK EVVVEEEERRRRRR.

Cilantro Lime Guacamole Recipe

For you folks that cilantro tastes like soap, I am so sorry! That’s a real bummer! It’s not your fault, it’s just genetics. People like me don’t taste soap when we eat cilantro.

And not for a lack of knowing what soap tastes like. My childhood had a few too many potty mouth cleansings. :/

Ahem…

Anyway.

Cilantro, for peeps like me, has an incredible flavor that is difficult to describe. So I won’t even try.

The “Recipe”.

This Cilantro Lime Guacamole is so easy to make it’s difficult for me to call it a “recipe”. But I suppose technically it is just that.

5 simple ingredients!

Cilantro Lime Guacamole Recipe
  • 2 avocados
  • the juice of 1 lime
  • 1-2 tbs chopped fresh cilantro
  • salt and pepper to taste

Cut the avocados in half and remove the pit. Use a spoon to scoop out that delicious creamy pulp. Add the lime juice, cilantro and salt, and pepper. Mash it up with a fork. Enjoy! Sometimes for a bit of smokiness, I like to add some of my DIY Smokey Chipotle Powder Spice.

*By the way…this guac freezes very well! In fact, avocados in general, do great in the freezer. When they go on sale for $.89 each, stock up! Cut them in half and remove the pit. Put them in a large freezer bag and get out as much air from the bag as you can. Throw them right in the freezer. Vacuum bags are even better!

Picking the perfect avocado is never really a shoo-in. You never know if the grocery store stored them properly. Sometimes just when you think you have picked the perfect avocado, you get home only to find it is overripe.

While it is completely possible and fairly easy to pick a perfectly ripe avocado at the store and rush home immediately to make this super yummy Cilantro Lime Guacamole, there is an even easier way.

Or, if you plan ahead…

Grab 2 green avocados, take them home and let them sit at room temperature for 3-4 days. They ripen like magic! 3-4 days and they are PERFECT!

I prefer to KISS my avocados. This method hasn’t failed me yet.
