Drool-Worthy, Gluten-Free Fudgy Brownie Recipe to Try Right Now!

Yesterday my 16-year-old daughter got her driver’s license. Any of you who have teen drivers understand my need to self medicate. What better medicine than this Drool-Worthy, Gluten-Free Fudgy Brownie Recipe?!

Gluten-Free Fudgy Brownie Recipe

Ironically, this recipe was created by my daughter Kylee. The one who just got her driver’s license. She knew what she wanted out of these brownies. Fudgy!

After researching various recipes, she took a little from this one and a little from that one, thus making it her own. Gluten is a bit of a problem for me so I suggested she use my Gluten-Free Baking Flour. I wanted a brownie just as much as she did.

Gluten-Free Fudgy Brownie Recipe

The thing I love most about this Gluten-Free fudgy brownie recipe is, even being gluten-free, they stay together! Not much worse than a brownie that falls apart.

What’s the best Gluten-Free flour?

This is the one I have been using. Bob’s Red Mill Gluten-Free 1 to 1 Baking Flour. It’s the best I’ve used so far! I have been able to convert many of my recipes to GF by simply switching only the flour! However, I would like to find something at a better price point.

For all my Gluten-Free friends…What’s your favorite cup for cup or 1 to 1 baking flour??!

Amazon has King Arthur GF baking flour $7.99 for a 3 lb bag. I’d like to try it since it is a bit cheaper. At my local Safeway store, it was $7.99 for a 1 lb bag!


Easy as 1, 2, 3!

This recipe is super easy.

First, melt 3/4 cup unsalted butter.

Combine the melted butter with 1 1/4 cups granulated sugar.

Add 1 1/2 tsp. vanilla extract. If you’re thinking it looks like I have two right hands here, It’s just my littlest giving me a helping hand. 😀

Punny.

Wisk in 2 whole eggs. Set that aside.

In a separate bowl combine 3/4 cup cocoa powder, 1/2 cup Gluten-Free flour, and 1/2 tsp. salt. Add the cocoa and flour mixture to the wet ingredients and whisk until all the dry ingredients are incorporated.

Finally

Fold in 4 ounces, about half a bag, of milk chocolate chips.

The batter is pretty thick so it doesn’t exactly pour, but…

Pour the batter into a greased 8×8 baking dish.

Bake in a 350-degree oven for 35-40 minutes! I feel like the telltale sign of a really good brownie is that crinkly top after baking. Don’t you think?

By the way, if you’re not gluten-free you can use all-purpose flour in this recipe just the same.

Drool-worthy Gluten-Free Fudgy Brownies

These are the best brownies I have ever had! Hands down! They are fudgy and chewy, AND...they stay together. No crumbly brownies here.

Ingredients
  

  • 3/4 cup melted butter
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 cup Bob's Red Mill 1 to 1 Gluten-Free Baking Flour
  • 3/4 cup baking cocoa
  • 1/2 tsp salt
  • 4 ounces milk chocolate chips

Instructions
 

  • Melt butter.
  • Whisk flour, cocoa, and salt. Set aside.
  • Combine melted butter, sugar, and vanilla. Whisk in eggs.
  • Add butter mixture to flour mixture and whisk until fully incorporated.
  • Fold in chocolate chips and pour into a greased 8x8 baking dish.
  • Bake at 350° for 35-40 minutes.
